I am not one to eat vegan — in fact, when I cook at home, I am often completely satisfied by two cheese quesadillas and half a pint of ice cream — but when I do, it’s usually because I am stuffing my face with avocado. I love avocado so much that when I set out to find the best vegan avocado recipes, it was difficult to narrow the list down. I would have been anxious — so many avocado pastas to choose from!!! — but the avocado I just ate (on half an everything bagel with tomato, FYI) wouldn’t allow it. See, avocados are one of Mother Earth’s super foods — creamy and delicious, bursting with healthy fats, begging to be Instagram-ed, and, according to new research from Harvard Health, good for people with anxiety! Avocados are rich in B vitamins which release neurotransmitters such as serotonin and dopamine, which people with anxiety and depression tend to be low on. I don’t trust people who don’t like avocado, honestly, unless you have an allergy, in which case you have my unending pity.
Now, avocado on its own is obviously meat and dairy-free, but I have found that the best avocado-centric recipes are often vegan, because the avocado itself is sublime enough that it is best complimented by other flavors grown from Mother Earth’s soil. (The exception being when I dip my cheese quesadillas in medium spicy guacamole, obviously.) Now, if only my health insurance worked at the farmers market…
